Soft Chocolate Sugar Cookies



INGREDIENTS:

  • 1/2 c. (1 stick) unsalted butter, melted
  • 1/2 c. (1 stick) unsalted butter, room temperature
  • 1 c. brown sugar, packed
  • 1/2 c. granulated sugar
  • 2 large eggs
  • 1 1/2 tsp. vanilla extract
  • 1/2 tsp. espresso powder
  • 2 c. all-purpose flour
  • 3/4 c. + 2 tbsp. unsweetened cocoa powder (I used cocoa rouge)
  • 1 tsp. baking soda
  • 3/4 tsp. salt
  • 1/3 c. granulated sugar (for rolling)

DIRECTIONS:

  1. In the bowl of a stand mixer (or a large mixing bowl with a hand mixer), beat the butter and sugars until light and fluffy, about 4 minutes.
  2. Add in eggs, one at a time, mixing well after each addition. Add vanilla and espresso powder, mix until combined.
  3. In a medium mixing bowl, whisk together the cocoa powder, flour, baking soda, and salt. With mixing speed on low, gradually add the dry ingredients. Mix until a soft dough forms.
